Chili Paneer : Frequently Asked Questions (FAQ)
This happens due to over-frying the paneer. As soon as it turns golden brown, remove it from the oil. Immediately after frying, if you put the paneer in lukewarm water for a while, it will become softer.
Soy sauce is essential to get the unique taste of Chinese dishes. However, if you do not have soy sauce, adding a little vinegar and sugar will give you an approximate taste. But you will not get the color that the original soy sauce gives.
If you are making dry chilli paneer, use very little water and cornflour mixture. The sauce can be bought from the oven in a pan that is well coated with paneer pieces.
Of course! Instead of paneer, you can prepare chili dishes in the same way using mushrooms, cauliflower (Gobi), or chicken.
Soaking dried chillies in hot water and grinding them will make a good fresh chilli paste. This can also be used as a substitute for red chili sauce.
